This is why we only work with indigenous Greek grapes, sourced from a network of visionary growers across the country. No estate vineyards. Just deep respect for collaboration, nature, old vines, and hands that farm with intention.
Our growers are our family and the base of Oenops wines. We support them in each step and we are proud to walk this journey together.
In our winery, we keep things simple. No heavy oak. No masking.
We vinify each vineyard plot separately using clay amphoras, concrete tanks, and neutral vessels, so that the wine stays fruit-forward, juicy, and full of life. What you taste in the glass is the grape, the soil, the sun — nothing more, nothing less.
Every bottle we produce is a tribute to authenticity, simplicity, and elegance. Wines you can open any time of the day, any day of the week or leave to age for years. Wines that feel honest, vibrant, and delicious.

About Nikos Karatzas
Born in Drama, trained firstly as a chemical engineer at Thessaloniki and later as an oenologist in Bordeaux, shaped by years of hands-on experience, Nikos Karatzas is the mind behind Oenops Wines.
After leading Ktima Pavlidis for over a decade, he set out to create his own path — creating a winery with no vineyards, just partnerships, and a clear goal: to express the true potential of Greek varieties through minimal intervention and maximum precision.
He is driven by the challenge to work with indigenous varieties that have been here before us and will be here after us. For Nikos, it is all about listening – to the grower, the grape, the land and the vintage.
His vision is not to impress, but to evolve both for himself and for every plot he is working with — creating wines that carry a sense of place, time, and soul.
